The razor-sharp edge trims through fat cleanly and makes it easy to portion larger cuts into individual servings with consistent results.

The one-piece stamped blade is made from German 1.4116 stainless carbon alloy for toughness, stain and corrosion resistance, reliable edge retention, and easy resharpening to a razor-like edge. The blade is heat treated and cooled to achieve a Rockwell hardness of 56–57 for dependable performance in demanding prep environments.

For commercial kitchen use, the Pro Series features an over-sized, hygienic molded polypropylene handle with a non-slip feel, offering comfort and security during longer breakdown sessions. Handcrafted in Santa Catarina, Portugal, it’s a dependable workhorse for serious meat prep.

Care of the knife:

Hand-wash with warm water and a mild detergent; rinse and dry immediately.

Do not place in dishwasher. Avoid cleaners containing bleach or citrus extracts.
