With a long cutting edge and a distinctive kiritsuke-style point, it excels at push cutting, crisp slicing, and accurate detail work—ideal for vegetables, herbs, and refined finishing cuts.

The blade uses a 3-layer construction with a VG10 “super stainless steel” core composed of cobalt, molybdenum, and vanadium, clad with high-quality stainless steel on both sides. This structure supports durability and corrosion resistance, while delivering an extremely sharp cutting edge and long cutting performance. A distinctive KATANA sword wave line is clearly observed on the blade, adding a refined signature detail.

For confident handling, the handle is made from EU food-safe regulation approved black beech pakkawood to provide outstanding stability. A stainless steel bolster and end cap help ensure excellent balance for the whole knife, giving you a secure, stable feel from prep to plating.

Care of the knife:

Hand-wash with warm water and a mild detergent; rinse and dry immediately to help protect the edge and preserve the blade finish.
