XINZUO Zhen Series Nakiri Knife 180mm (7”) is a dedicated vegetable knife built with a Hitachi ZDP-189 powder steel core and SUS405 stainless outer layers (3-layer). At 65–67 HRC with a 15±1° per-side edge, ZDP-189 is prized for exceptional wear resistance—meaning excellent edge retention and a crisp, stable bite for repetitive veg prep. Hand-brushed finish, rounded spine/heel details, and an octagonal Desert Ironwood handle with White Bull Horn accents complete the premium build.
The XINZUO Zhen Series Nakiri Knife 180mm (7”) is a purpose-built vegetable knife designed for fast, clean prep. Its tall blade and straight cutting edge make it ideal for push-chopping, slicing, and shredding vegetables and fruits with consistent board contact and easy control.
A nakiri is made for produce work—not for impact tasks. Use it for onions, cabbage, carrots, herbs, and everyday veg prep, and avoid bones, frozen foods, hard shells, and twisting/prying in cuts to protect the fine edge.
The blade features a Hitachi ZDP-189 powder steel core hardened to 65–67 HRC. In practical terms, ZDP-189 is known for very high wear resistance, which helps the edge stay sharp longer through lots of slicing and chopping. Because it’s a very hard, edge-retentive steel, it rewards smooth technique and careful use around hard ingredients.
Construction is 3-layer: a ZDP-189 core with SUS405 stainless steel outer layers to support the edge and improve day-to-day ease of care. The edge is finished to 15±1° per side for a keen, precise feel, and blade thickness is listed at about 2.1mm for a balanced blend of control and stability.
Comfort details matter on a nakiri used for repetitive prep: the blade spine and back are made with rounded corners to reduce pressure and accidental finger contact during longer sessions. A hand-brushed blade surface highlights a clean, delicate metal texture.
The classic octagonal handle combines Desert Ironwood with White Bull Horn accents for a secure, traditional grip. Listed dimensions are 337mm overall length, 183mm blade length, and 138mm handle length, with a net weight of 185g.
Care of the knife:
Hand wash only. Rinse and wipe clean promptly after use, then dry thoroughly before storing. Do not soak and never put the knife in the dishwasher.
Use a wood or soft plastic cutting board to protect the edge. Avoid twisting, prying, and contact with bones, pits, shells, and frozen foods—very hard edges can micro-chip if used on hard impacts.
Store safely in a block, on a magnetic rack, or with an edge guard. Sharpen as needed with quality stones and light, controlled pressure to preserve the keen edge geometry.
